Where possible, local produce is used in the preparation of all meals with an emphasis on artisan producers.
Food is prepared by Eamonn, trained by Darina Allen at the renowned Ballymaloe Cookery School in Cork. Eamonn is a member of the Slow Food Movement.
This Spring will see the planting of our own organic garden at Rathellen. The garden will provide organic fruit and vegetables for the kitchen.
